  • 2 lbs lotus root, trimmed and peeled
  • 2 tablespoons sesame oil
  • 1 1/2 tablespoons honey (or sugar)
  • 1 cup sake
  • 2 tablespoons dark soy sauce 
  • 1-2 teaspoons of finely chopped red chili pepper or sambal (you can always add more heat so go slow at first)
  • 1 tablespoon (or more) of toasted sesame seeds

 

Cut the lotus root crosswise about 1/4 thick.  Soak in a bowl of cold water and then strain. Do this a few times until the water drains clear.  Let them dry. 

In a non-stick skillet or wok heat up sesame oil. Add the lotus roots and toss until they are covered with oil.  Add the mix of sake, sugar, soy sauce and chili pepper/sambal.  Stir/toss continuously until the sauce is reduced and thick (about 10 mins). Once thickened, add the sesame seeds and toss, then transfer to plate or bowl.
